Full junmai sake - drink warm

Standard sake of Shinkame Shuzo, the legendary brewery that led the pure sake movement in the postwar period. The standard is high: the most painstaking way of making koji, ginjo-polishing, and 2-3 years of maturation. At first soft and dry, but eventually plenty of acidity and umami. Store dark and cool. Drink preferably warm, in the spirit of previous brewery owner Ogawahara Yoshimasa.

Recommended with almost all warm dishes.
