Atelier Nonbe
Sake, properly called "Nihonshu", is made solely from rice, water, yeast and koji mushroom, but these few ingredients give rise to an astonishing range of tastes.
We offer a wide range from fresh, unpasteurized sake to amber vintages over 30 years old. The variety of flavors between the two is astonishing. Each sake has been selected for its distinctive or even unique character.
The selection of sake is made and proposed by Jean-Paul Choi, sake sommelier (vice champion Sommelier of the year 2014) and owner of the NONBE restaurant.
In collaboration with the Chef de cuisine of the NONBE restaurant, Norihiro IMAMURA, Sake Shop by Nonbe wants to share his passion for sake and culinary pairings.
