The knife is forged from a single piece of high-alloy chrome-molybdenum steel (DIN 1.4110) and hardened using the sub-zero process. The stainless blade with a blade hardness of 55 to 58 HRC guarantees precise and effortless cuts. The V-grind on both sides ensures long-lasting sharpness and edge retention, while the ergonomically shaped handle made of glass fiber-reinforced polycarbonate lies securely and comfortably in the hand. Attached directly to the steel bolster and fastened with aluminum rivets, the seamless handle offers optimum stability and safety. At the same time, it ensures comfortable, balanced and fatigue-free work, and the durable knife has been awarded the US quality seal NSF (National Sanitation Foundation).
