Grape variety : Syrah 25 years (55%), Carignan 60 years (30%) & Grenache 30 years (15%)
Terroir : Graves slopes on clay-limestone and marl soils
Viticulture : Gobelet & cordon de Royat pruning (Syrah), ploughing 1 row on 2, inter-cep work
Harvest : Manual, sorting in the vineyard and in the cellar before destemming
Vinification : Stainless steel and cement vats, fermentation with indigenous yeasts, 28-30 days of gentle maceration
Maturing : Barrels for 12 months with stirring of the lees then vat
Production : 16.000 bottles Bottled unfined and unfiltered
Tasting : Nose on black fruits and zan. Intense and mentholated mouth
Pairings : Red meat, grilled, roasted or simmered
Alcohol level : 14,5
Cellaring : To drink within 10 years
Service : Decant and serve at 15°C
