Closed-cage pneumatic press

In thermo-regulated stainless steel tanks, each grape variety is collected individually in vats
- Measured pressing and careful settling
- Skin contact maceration for Grenache and Syrah
- Pre-fermentation stabulation for 10 days at around 8°C
- Fermentation controlled by maintaining temperature at 17°C
Aging in thermo-regulated stainless steel tanks - on fine lees - lasts 1 to 2 months
Serving temperature 8°C to 10°C

Tasting notes Pale salmon color with a pleasant nose of citrus fruit and acid notes. Round and generous on the palate, with fruity notes.
