On this 50 hectare site, given to us by the monks of Cîteaux, the winery Jacques Prieur is the proud owner of 1.28 hectares of vines planted on clay soils
.After manual harvesting and a very accurate sorting, the grapes are completely destemmed so that vinification can begin. The must is then left to macerate in open wooden vats for about twenty days at a controlled temperature. The grapes are harvested twice a day during alcoholic fermentation, malolactic fermentation takes place at 100%.
This isfollowed by about twenty months of aging in oak barrels (50% new).
At tasting, it is an exceptional wine that beautifully combines a beautiful concentration and the smoothness of the crus in the middle of the mouth. The dress is a beautiful ruby with a dark color. Discover floral notes and red and black fruits (raspberry and blackberry) on the nose. It is a wine with impressive length on the cherry, its tannins are quite meaty.
We suggest you pair this pretty bottle with game such as venison with hunter's sauce. If you are more of a lamb lover, try to prepare a delicious filet of lamb in a crust.
