: stony plateau of the Crau (southeast of the appellation.
SOIL AND SUBSOLUTION: Miocene molasses (1 to 1.5 m deep) resting on a thick layer of clay heavily laden with pebbles, and covered by the mantle of alpine diluvium, commonly called "galets roulés
".
VINEYARDS
: 65% Grenache noir, 15% Mourvèdre, 15% Syrah, 5% Cinsault, Clairette and others.
VINEYARDS AGE: 70 years old on average.
WINEMAKING PROCESS: manual harvest with double sorting in the vineyard, followed by
a third sorting in the cellar, light crushing and selective de-stemming, traditional fermentation of 30 to 40 days in stainless steel and wooden vats under controlled temperatures. Pressing in a pneumatic press, systematic malolactic fermentation.
20/22 months in French oak barrels of 60 hectoliters. Bottled without fining or filtration.
PERSONALITY AND AGEING: a very beautiful and elegant red Châteauneuf-du-Pape
.TASTING TEMPERATURE: 17°C.
AVAILABLE SIZES: 75 cl, half-bt, magnum, jeroboam (3 l),
mathusalem (6 l), salmanazar (9 l), nabuchodonosor (15 l). POTENTIAL PRODUCTION: equivalent to 200 000 bts of 75 cl.
