GRAPE VARIETIES AND TERROIR
Grape varieties 50 % grenache and 50% cinsault (rootstock R110). A very stony clay-limestone soil. A south-east - east exposure with an altitude of 230 m.
VINIFICATION
After having harvested all our grapes by hand, our harvest is led to the pneumatic press ensuring a light crushing. After 4 to 6 hours of maceration to obtain the desired color and before pressing, the first juice called "juice of bleeding" will be isolated to ensure the production of the Cuvée Alexandra. The press juice will be used to produce the Cuvée Château. Each grape variety is vinified separately, and it is only after their alcoholic fermentation that the Grenache/Cinsault blend completes the cuvées.
TASTING
Our Cuvée Alexandra, composed of 50% Grenache and 50% Cinsault, has a light pink color with old rose reflections, luminous, brilliant, like silk. Its complex nose combines finesse and elegance with aromas of red fruits, where wild strawberries dominate. Its mouth is lively, nervous, especially greedy. The palate is flattered by this greedy wine. We find the pot pourri of small silky fruits, not at all alcoholic. The finish is quite long. A true gastronomic rosé.
FOOD AND WINE PAIRING
Serve at 11/12°. Ideal with Provençal cuisine, a petite friture of red mullet, grilled sardines, anchovies, a carpaccio of scallops or even packet feet with truffle stuffing. Tartar of wild sea bream, grated Menton lemon IGP and juice, grated ginger. Chervil, fleur de sel de Camargue pepper mill with red berries, AOC olive oil from Nice.
