Pepper salami is a large sausage prepared mainly from the lean parts of the pig, then salt, pepper powder, natural spices and a little garlic are added. The slow curing process lasts at least 50 days. Pepper salami is lightly smoked with hardwood and rolled with pepper on the surface. Its flavor is intense in the mouth and its texture is very fine. It is a family recipe and typical of our regions. Homemade product. Eaten on a homemade bread with quality butter.
