Mirabelle "Très Vieille" 45° - Exceptional Eau de Vie Distillerie Nusbaumer

After a natural fermentation of several weeks, the stones are removed and the fruit is distilled in a small copper still in a traditional way.
After a long resting time, the distillation is reduced to 45° with mountain spring water. This water, which runs through a subsoil of purple schist, is of great purity and gives it a singular strength.

This exceptional eau-de-vie is the expression of the sweetness of the mirabelle plum fruit.

Color: colorless.
Nose: very precise, we find the greediness of the ripe fruit as well as the very light notes of the stone.
Mouth: as precise as the nose imagined it to be, this eau-de-vie is of a great delicacy. The greediness of the fruit reminds us of mirabelle plum pastries and the mineral notes bring a striking contrast.
Finish: beautiful length in mouth, the almond notes of the stone are prolonged.
