Dried meat is also called throat meat. It is a very lean muscle meat from the neck of the cow. A high-quality protein source, low in fat and especially tender in texture. The neck muscles in the throat area are rather long and flat. Therefore they are easy to hand-trim when cut. If machine-cut, they would shred. Because throat meat is naturally so thin, it also dries faster than thick muscle meat. These thin muscles dry quickly and very gently.
