HSE "Single Cask" 2006 47.8°. Martinique

This HSE Single Cask from 2006 is a great vintage agricultural rum from Habitation Saint Etienne in Martinique. Produced at the Simon distillery, it is a rum that was distilled in a Creole column before spending 15 long years in French oak barrels, under the watchful eye of cellar master Lionel Lampin. The nose opens with a very woody and elegant perfume, garnished with spices that come from far away lands. On the palate, the wood grabs the taste buds and quickly rolls them in a carpet of spices mixed with toasted bread powder. The greedy walnuts take over, their roasted envelope revealing their fatty flesh. The ripe cane gathers around it dried fruits and exotic fruit juices, it coats them with a sure taste and a certain sense of elegance.
