Cognac X.O. "Pale & Dry" 42°. Delamain

COLOR: intentionally one of the lightest XOs, a bright, velvety gold. Minimal coloring so that from one cut to the next, the color is constant and not to darken the cognac.

STYLE: delicate and light, very well balanced cognac with a delicate aroma and the mellowness of age. Excessively slow aging of the Grandes Champagnes. No addition of wood.

BOUQUET : power and length of the perfumes in the nose, intense floral then vanilla appearance of the rancio.

FLAVOR: softness and roundness in the mouth, developing into fruit.

NAME : Pale & Dry, Pale because it is not brown - which in the 18th century meant strongly mixed brandies - and because it is much lighter than other cognacs of this age due to the use of old ageing casks. Dry because it is not sweet but has a natural sweetness due to the aging process.
