The Copa ! Pierre Clavel's wine, an icon in the bottle. 2019 marks the renewal of Copa Santa, in the territory of Montpeyroux - Terrasses du Larzac. Ample, round, curved, Copa fills our cravings for greedy and fruity flavors. Its aniseed and licorice aromas bring a freshness that encompasses and excites our senses, reinforcing the idea that we have of a beautiful Languedoc wine. Its character calls for dishes that are both strong in flavor and generous, such as a jugged hare with black currants or lamb with herbs. On the grilled side, the sausages are spicy or flavored with fennel. As for cold dishes, the carpaccio of duck breast or the more subtle but no less powerful sliced octopus with chickpeas and chorizo.
