Grape variety:100 % Braucol
Vinification:For this intimate cuvée we carry out an "integral vinification" which means that all the vinification and maturation operations are done in 400L French oak barrels. To do this, our cooper opens the barrels on one side and they are straightened to accommodate the harvest. The grapes, just picked, are destemmed and tapped. The alcoholic fermentation will then start thanks to the yeasts naturally present on the berries. Every day, we punch down our barrels manually. This technique consists in pushing the cap of marc into the liquid phase of the barrel. It is a gentle and efficient extraction technique, which allows us to obtain color and tannic structure, without giving astringency. Once the fermentation is completed, we press our grapes which we re-enter in the same closed barrels. The malolactic fermentation will start naturally, often in the spring, when the temperature rises in the cellar due to the climate. The maturation will continue for 18 months. Just before bottling the wine will be lightly filtered to eliminate the deposit that may have formed over time.
Tasting :Robe: Deep purple with intense ruby reflections
Nose: The first nose offers us aromas of wild berries. The blackcurrant is king here, fresh and greedy. The powdery notes of cocoa and liquorice are subtly linked to this fruit to compose a complex aromatic picture.
Taste: The attack is frank, round, with a beautiful tannic structure fondue which allows it to improve over the years. We find in mouth the fruity aromatic palette. It reminds us of the blackcurrant jelly of our childhood. The roasted notes of mocha mingle with a discreet camphorated frame, giving it this character and its length in mouth.
Food and wine pairing: Excellent with a 7 hours lamb. For the more gourmet, a dark chocolate and red fruit mousse should be a pleasant companion for this bottle.
