HARVEST:
IN THE FIRST 10 DAYS OF OCTOBER BY HAND. THE GRAPES ARE HARVESTED AND PUT IN SMALL PLASTIC BOXES FOR ABOUT 4 MONTHS IN SPECIAL, DRY AND WELL VENTILATED ROOMS CALLED "FRUTTAI".
VINIFICATION:
END OF JANUARY THE GRAPES ARE LOST ON THE 40-45% OF THE JUICE, FROM THE LOCATION BEGIN THE VINIFICATION. MACERATION FOR ABOUT 20 DAYS AT 23-28 °C. THE AGE OF THE WINE IS 60 MONTHS ON A LARGE BARREL (SLAVONIAN OAK) OF 30 HL. AFTER BOTTLING, IT AGES AT LEAST 6 MONTHS ON THE BOTTLE BEFORE BEING SOLD.
ORGANOLEPTIC :
DEEP RUBY. INTENSE AROMAS OF BLACK CHERRY AND PLUM ARE COMPLICATED BY COCOA AND COFFEE. RICH AND FRUITY ENTRY, THEN MORE FLORAL, LONG FINISH WITH A REFINED BUT VERY DENSE AND TACTILE MOUTH.
FOOD AND WINE PAIRING:
GOES WELL WITH ROBUST DISHES SUCH AS VENISON OR ROASTED MEATS AND VERY SHARP CHEESES, BUT IT IS ALSO A GREAT WINE FOR DRINKING.
