GRAPE VARIETIES AND TERROIR
Grape varieties 100 % rolle (rootstock R110). A very stony clay-limestone soil. South-east exposure with an altitude of 230 m.
VINIFICATION
The parcel destined for this cuvée will be harvested on the last day of the harvest. This harvest, which is "over-ripe", is carried out in a pneumatic press to ensure a light crushing. After a few hours of maceration, in order to extract the best of the candied aromas, the flexibility of the pneumatic press extracts the must. This one will live its fermentation in demi-muids in order to confer it more fat and a light note of smoked.
TASTING
Its luminous straw yellow color brings us some reflections slightly tending to green. A floral and fruity nose with a nice aromatic intensity, white flowers, citrus and dried fruits. There is a nice complexity, notes of dried fruits (almonds, hazelnuts). Mouth, ample, rich unctuous and perfectly balanced, very tasty. What a beautiful suavity, it is long, we feel the well vinified rolle.
To be served at 6°. Ideal on a starter of foie gras, fish oursinade, sea urchin purée...Turbot with mousseline sauce, baked Saint-Pierre, olive oil. Bresse capon roasted in a casserole with morels, cream deglazed with Clos de Madame, a few pommes dauphines, carpaccio of St Jacques d'Erquy on a base of organic Yuzu jelly.
